with Chef Brent Hale of Big Sexy Food

Having knowledge of the five French mother sauces will prove essential in any culinary journey. They may seem intimidating, but mother sauces will nurture your kitchen confidence. With a few simple ingredients and some easy techniques, these five sauces (all equally important to your cooking repertoire), serve as the starting point for a slew of other classics. Join us along Chef Brent Hale in the HKS Kitchen as he focuses on three out of the five sauces in Part 1 of this class series: Béchamel, Espagnole, Velouté.  

Chef Brent will guide participants as they build each of the three sauces from scratch, learning the ingredients and techniques to create each sauce base.  He will explain the different stages and how to create and add on to each sauce to create different variations.  Guests will have bread to "taste as you go" to understand the flavor of the sauces as you build.  Then guests will continue to build off their Velouté base to create a Jägerschnitzel dish, thinly fried pork with a mushroom gravy. Recipes will be provided. MEET THE CHEF

Chef Brent Hale started cooking when he was just a young boy when he learned to make popcorn balls and biscuit dough mini pizzas. As he grew so did his love of food and desire to make a name for himself. Chef Brent attended culinary school in Arlington, Texas at a local community college. After graduating he worked as a personal chef. It was during this time he began his first culinary business, “Dining By Design” a small catering company. He moved to Northwest Arkansas in 2008 and founded BIG sexy Food in January of 2016 specializing in high end, in-home dining. BIG sexy Food expanded into the food truck business and now have three trucks across Northwest Arkansas. Chef Brent was a recent winner of Guys Grocery Games on the Food Network, “Friend or Foe” episode and returned back for the “Supermarket Rematches” episode.
