Whether you’re looking for “party fare” or just some beautiful bites for your family, these flavor filled empanada recipes will bring magic to your table. Originating in Spain, empanadas were originally a “slice” of a savory pie that evolved into a meat, seafood, veggie, or fruit filled pastry that workers would take for their mid day meal. Home chef Helen Lampkin will welcome you to the HKS Kitchen with warm corn tortilla chips and an empanada filling of cheesy chicken goodness served as a hearty dip.  Then participants will jump into the hands on portion of the class and create a traditional empanada dough from scratch using flour and masa harina.  You will create a delicious savory beef filling for this dough. Helen will also provide an additional filling recipe that leans into breakfast using eggs and potatoes. A sweet bite will complete the class with Apricot Empanaditas created with a more traditional southern pastry crust. Recipes will be provided.

MEET THE CHEF:

Helen Lampkin, woman of faith, devoted wife, mother and grandmother, lives an inspired “no ordinary” life based on the words found in Colossians 3:23 – “do all things wholeheartedly to the Lord.” This inspiration is at the heart of all she does and has led her to become an entrepreneur (founder of My Brother’s Salsa), artist, adventurous cook, recipe developer/writer, food stylist, and blogger.  You can follow Helen on instagram @helenstable
