Know your Camembert from your Brie? Or your Gorgonzola from your Roquefort? Whether you are a beginner cheesemaker or just a hungry cheese enthusiast, this class is the perfect foundation to expand your knowledge behind the art and science of cheese.  Please join HKS in partnership with Jessica Keahey, the “Big Cheese” behind Sweet Freedom Cheese, to learn the fundamental ingredients used in all cheeses, basic milk composition characteristics (and its importance in cheesemaking), and how to select quality milk. Participants will learn about the differences that separate cheese varieties, as you taste your way through fresh, soft-ripened, bloomy, washed rind, hard, and blue cheeses.  Enjoy your cheeses with a selection of breads/fruits/nuts as well as wines picked and paired by Francois Guilloux of Vino Distribution. You’ll leave confident in how to identify, select, store, cut, and serve fine cheeses as well as what accoutrements go best with each!

MASK POLICY AT HKS:

Masks are encouraged but not required during our classes.  Please be advised in our new HKS kitchen, you may be working in small groups in a hands-on experience.

MEET THE CHEF:

​In 2012 founder, Jessica Keahey, fell head over heels in love with cheesemaking and envisioned bringing the artisanal cheese movement to her home state.  Today, Sweet Freedom Cheese is the first independent, cut-to-order cheese shop and education center in Northwest Arkansas.  Sweet Freedom partners with local businesses, colleges, schools, and other institutions to teach workshops, lectures, and classes about cheese and cheesemaking around Arkansas. 


Francois Guilloux was born in Paris, just a 7 minute walk from the Eiffel Tower. Living the Parisian life for 30 years will definitely train you on the fundamentals to become an Epicurian. Wine is the perfect combination of Art and Science and at the crossroad for what the French culture is known. His passion for food and wine started early, at the traditional family Sunday lunches and dinners with friends. As he has learned how each meal can be an opportunity to experience something special, Francois continues to be excited to explore and discover food and wine pairings each time he pulls up a seat to the table.

Now settled in Little Rock after living in Asia for 5 years, he loves sharing his own experience and passion to help others experience something special around the table too. Francois conducts private wine tastings, wine dinners and wine tours. He is currently pursuing WSET level 3 from the wine institute, headquartered in London. He is married to a wonderful wife from Arkansas and has 4 amazing kids.
